Easy Pepper Steak
1 package (0.87 oz.) Brown Gravy Mix
3/4 cup water
1 tablespoon soy sauce
1 1/2 - 2 pounds flank steak or sirloin steak, thinly sliced diagonally
1 tablespoon oil
1 medium onion, sliced
2 bell peppers, cut in thin strips
rice (optional)
Combine Brown Gravy Mix, water and soy sauce. Set aside.Heat oil in large skillet. Saute meat 8-10 min. or until brown.Stir in Brown Gravy Mixture, bring to a boil and simmer 10 min.Add onion and bell peppers, simmer 10 min. Serve over rice, if desired.Makes 4 servings
Mandarin Orange Salad
3 to 4 c. salad greens broken (leaf, Bibb lettuce, spinach)
1/4 c. sliced onions
1 (11 oz.) can mandarin oranges, drained
1/4 c. slivered almonds, toasted in butter
1/4 c. vegetable oil
2 tbsp. vinegar
2 tbsp. sugar
1/2 tsp. salt
1/4 tsp. pepper
Combine the greens, onions, mandarin oranges and almonds.Make the dressing with the vegetable oil, vinegar, sugar, salt and pepper. Chill in refrigerator for 2 hours before tossing with the salad ingredients.
Chicken Quesadillas
12 ounces cooked chicken breast halves
2/3 cup shredded monterey jack cheese
1/4 cup finely chopped green onion
8 (8") flour tortillas
1 cup salsa
1 cup sour cream
Combine chicken and salsa in bowl. Divide chicken mixture, cheese and green onions evenly among 4 tortillas.Cover with remaining tortillas. Heat one tortilla stack in large skillet over medium heat for 2-3 minutes.Turn tortilla over and repeat for another 2-3 minutes or until cheese is melted. Repeat with remaining tortilla stacks.Serve with sour cream.
Spanish Rice
1/4-1/2 cup vegetable oil
1-2 cup long grain rice
1/4-1/2 teaspoon salt
1-2 tomatoes, diced
1/2-1 small onion, diced
3-6 cloves garlic, minced
1-2 teaspoons cumin
2-4 tablespoons tomato paste
2-4 cup water, boiled
In a medium saucepan, over medium heat, fry rice in oil until slightly golden, about 3-5 minutes.Add salt, cumin, onion and garlic and sauté 1 minute. Add tomato, tomato paste and boiling water. This should boil almost immediately; turn down heat to low, cover and cook for about 20 mins, or until water has evaporated.
Taco Soup
1 lb lean ground beef (or turkey)
1 onion, chopped
1 pkg taco seasonings
1 pkg dry Ranch seasonings
2 large cans diced tomatoes, undrained
1 can Rotel tomatoes, undrained
1 can black beans
1 can pinto beans
1 can whole kernel corn
Brown meat and onion. Drain. Add seasonings. Drain beans and corn. Add to meat along with tomatoes. Simmer until well blended and hot. Eat and enjoy.

Thank you Kelly! Meal planning has sure helped my grocery budget, and it takes all the guess work out of what's for dinner. I was skeptical at first, but it really works.
