Time for another weekly menu plan! Last week worked out beautifully. This week, I am adding something new. My two boys (ages 15 and 17) come home starving and eat literally everything in sight. So I am adding an after school snack menu. I am also adding recipes for some of my menu items.

Monday (my study night)
after school: Peanut Butter and Jelly Sandwich, milk

Supper:
99 cent double cheeseburgers (from Hardees)
chips
chocolate chip cookies

Tuesday
after school: chocolate chip cookies, milk

Supper:
Ham Alfredo
Buttered Peas
Dinner Rolls


Wednesday
after school: Cheese and Crackers, milk

Supper:
Chili Dogs
French Fries
Peach Cobbler Cake

Thursday

no school

supper:
Leftover Turkey Sandwiches
Veggies and Dip
Brownies

Friday

no school

supper:
Sideline Sausage Soup
Grilled Cheese Sandwich

Ham and Cheese Omelettes

Chili Skillet Supper

1 pound ground beef
1 14 oz can diced tomatoes, undrained
1 can kidney beans, rinsed and drained
1 cup uncooked long grain rice
1 cup water
2/3 c. picante sauce or salsa
1 packet chili seasoning

Brown ground beef, drain. Add remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 20 to 25 minutes or until rice is tender. Serves 6 -8


Sideline Sausage Soup

16 oz. cooked smoked sausage, halved and sliced thin
1 can black beans
1 can red kidney beans
1 can diced tomatoes
2 cloves garlic, minced
1 small onion, chopped
3 cups chicken broth
1/2 tsp each dried oregano, ground cumin, salt

Combine all ingredients in a large saucepan. Bring to a boil. Reduce heat, cover and simmer 15 minutes, OR dump everything into a crock pot and let it simmer on low all day.

Ham Alfredo

1 pound bow-tie pasta, cooked
tablespoons flour
2 cups milk
2 tablespoons butter
3 garlic cloves, minced
8 ounces cream cheese, softened
1/2 cup Parmesan cheese
3 cups cooked ham, in julienne strips (1 inch long)

Blend together flour and milk in jar with a tight-fitting lid by shaking until blended. Heat butter in saucepan over medium heat. Add garlic and cook for one minute. Whisk in milk mixture. Simmer for three minutes. Whisk in cream cheese and 1/4 cup Parmesan. Simmer, whisking constantly for 3 -5 minutes, until smooth and thickened. Remove from heat. Toss together hot pasta, sauce, peas and ham in large bowl. Sprinkle with remaining Parmesan and toss again.

Hi Crystal! I have made a promise to myself to make a menu every week. So far it has saved me on the ol' grocery bill, and it has kept us from eating out or buying expensive meals from the deli.
